If you love Corned Beef and Cabbage, this recipe is probably the easiest thing to make ever!
In our home, we love corned beef and cabbage anytime. I love putting lots of carrots and potatoes in this recipe.
I like to make this recipe in the crock pot because it’s super easy and clean up is a breeze.
This recipe is cooked for 6-8 hours in the crock pot on high, but you can also cook it on the stove top in a large pot, or oven in a deep dish, as well. If cooking on the stove top or in the oven, you may need to add a little more liquid to the pot.
Easy Corned Beef and Cabbage
Quite possibly the easiest meal you can make, this corned beef and cabbage is a family favorite.
Prep Time 15 minutes mins
- 1 4lb. Corned Beef Brisket w/spice packet
- 1/2 head Cabbage cut into large slices
- 1 small Onion cut into chunks
- 4 large Carrots cut into thick chunks
- 6 small Red potatoes cut into chunks
- 1 12oz. Bottle of beer (any flavorful type you like)
- 1 oz Mayo
- 1/2 oz Grain Mustard
Like I said, this is truly a super easy recipe.Remove Corned Beef Brisket from packaging and rinse under cool water. Set your brisket aside while preparing remaining ingredients. Don't toss out the seasoning packet that comes with the corned beef because it's a key ingredient. Cut cabbage into large slices. Don't cut the cabbage into too small of pieces so they retain their body during cooking.
Peel carrots and onions and cut into large chunks.
I like to leave the skins on the red potatoes but you can remove them if you prefer. Rinse potatoes off and cut into large chunks.
Add your onions to the bottom of your crock pot and lay some of the cabbage on the bottom.
Place your corned beef brisket on top of the layer of onion and cabbage and add remaining ingredients.
Pour your 12 oz of beer over the top of the corned beef brisket and sprinkle the seasoning packet over the top.
Put remaining cabbage over the top of the corned beef and place cover on crockpot.
Cook for 6-8 hours on high.
When the meal is cooked, remove corned beef and slice against the grain.
Mix mayo and mustard together for a delicious dipping sauce.

If it’s St. Patrick’s Day, I highly recommend an Irish beer such as Smithwicks Irish Ale. Drink responsibly and most of all ENJOY!
